Annick De Splenter got the idea for her city brewery from foreign customers asking for good quality, authentic Belgian beers. When she discovered that the premises of the former Brasserie Flor on Grote Huidevettershoek (behind the Minard Theatre) were free, the plan started to take shape.
The development of the new Gruut beer was preceded by a long process of research. Replacing the traditional hop with a blend of herbs proved to be a difficult task. The herbs not only had to be easily obtainable; they also had to comply with stringent food standards. In addition, they had to be able to take over several of the hop’s practical properties (pleasant bitterness, foam stabilising, protection against unwanted bacteria).
Gruut Wit and Gruut Amber have been exported to the US for over a year and a half now. Since the brewery opened last spring, they have been joined by Gruut Blond. Gruut for export is brewed in Bavik, but Gentse Gruut comes from the plant in the Huidevettershoek premises.
Gruut can be tried in many cafés and brasseries throughout Ghent and, of course, in the brasserie of Brewery Gruut itself.
